We all crave a comforting bowl of soup during the cold months of the year. This easy recipe gives you a great way to warm up when the weather cools down. While soup is usually synonymous winter, this recipe is really an all-weather dish. The light and fresh ingredients also make for a perfect summer soup! You can easily adapt this recipe to just about any diet. Not only is it easy to make, it’s easy on the wallet too. This budget-friendly recipe should cost only you $10 or less to make!
Ingredients:
Chicken Breasts
Chicken Broth
Olive Oil
Onion
Jalapeno
Garlic
Fiesta Seasoning
Smoked Paprika
Cumin
Salt & Pepper
Lime
Roma Tomatoes
Avocado
Cilantro
Instructions:
Spray crockpot with cooking spray and add chicken breasts. Note: add ½ cup of water if using fresh chicken, frozen chicken will not need the extra water. This is my FAVORITE crockpot to use when I want to cook meats to add to a meal.
Then add salt, pepper, and fiesta seasoning. Cook on low for 3-5 hours or high for 2-4 hours. Once chicken is no longer pink, shred chicken apart in the crockpot using a fork or spoon.
Add 1 tablespoon of olive oil to a large pot on medium heat. Then add onion and jalapeno to pot and cook for 3-4 minutes until tender.
Add in minced garlic, salt & pepper, cumin, smoked paprika, and fiesta seasoning. Continue to cook for 1 minute.
Add chicken broth and shredded chicken to the pot, cover with lid, and bring to a boil. Once boiling, reduce heat to medium-low and simmer for 15 minutes.
Remove from heat and add fresh lime to soup. Top each serving with avocado, tomatoes, cilantro, and any additional desired toppings.

Recipe Variations:
This really is not a spicy soup even with the addition of the jalapeno. However, if you prefer a milder soup, feel free to omit this ingredient!
Use chicken thighs or a rotisserie chicken instead of chicken breasts.
Bone broth can be used instead of chicken broth for those on the Keto or Paleo diet.
Green onions also work well instead of a white onion.
If you don’t have any minced garlic on hand, garlic powder will work just fine as well.
I use any type of “Fiesta” seasoning that has a Mexican flair with lime. If you don’t have any on hand, just add a ½ tsp more of cumin, salt, pepper, and smoked paprika.
Additional toppings that pair well with this soup: tortilla chips or strips, Colby jack cheese, sour cream, cilantro. We usually make cheese quesadillas as a side to this soup as well which can be made on the stove or you can make an Air Fryer Quesadilla if you have an air fryer at home!
Healthy Chicken Lime & Avocado Soup Crockpot Version:
Instead of only preparing just chicken in the crockpot, you can do the whole recipe in the crockpot if you wish!
Spray crockpot with cooking spray and add chicken breasts, chicken broth, jalapeno, onion, and all spices. Cook on low for 6-8 hours or on high for 4-6 hours.
When ready to serve, shred apart chicken in the crockpot using a spoon or fork. Add in lime juice. Top each serving with avocado, tomatoes, cilantro, and any additional desired toppings.
Or if you prefer to only prepare the meat in a slow cooker you can definitely do that too. This is a great recipe to use up leftover slow cooker whole chicken and you’ll cut down on your prep time by using the leftover chicken for the soup.

Healthy Chicken Lime & Avocado Soup Freezer Version:
Prepare the soup as instructed. However, the recipe will taste best if you only freeze the soup-base (shredded chicken, broth, jalapeno, onion). When ready to serve, add lime, cilantro, tomato, and avocado.

- 1/2 lbs Chicken Breasts
- 1 tbsp Olive Oil
- 32 oz Chicken Broth
- 1 small White Onion (diced)
- 1 medium Jalapeno (diced, remove seeds)
