Slow Cooker Corn Casserole

Ingredients

  • 2 (15.25 oz) cans whole kernel corn, drain well
  • 2 (14.75 oz) cans sweet corn cream style
  • 2 (8.5 oz) boxes Jiffy corn muffin mix
  • 2 cups sour cream
  • 1 stick butter, melted
  • 1/4 cup honey

Instructions

  • Lightly spray the inside of the slow cooker pot with cooking spray.
  • Place all ingredients into a large mixing bowl and stir well to combine.

  • Pour the corn batter into the slow cooker and spread out into an even layer.
  • Place lid on top and cook on the low setting for 4-5 hours or the high setting for 2-3 hours.

  • If you cook this corn casserole on high, make sure to check on it after 2 hours to ensure that it is not burning. It's normal for the edges to brown but you don't want it cooking too quickly along the edges and the center is still raw.
    You can test that the corn casserole is done by inserting a toothpick in the center. When you pull it out, it should be mostly clean. It should not be wet with raw batter.
    This version of corn casserole is sweet from the honey. You can make it savory or spicy by omitting the honey and adding shredded cheese, jalapeƱos or diced green chiles, or cooked bacon pieces.
